Sweet Potato and Bacon Baked Quesadillas
This quick and easy lunch is a great way to use up leftovers from the night before.

Ingredients
- 8 slices P’tit Quebec Natural Cheddar Very Mild Cheese Slices
- 4 large flour tortillas
- 1 cup (250 mL) mashed cooked sweet potatoes
- 8 slices bacon, cooked and chopped
- 1/2 cup (125 mL) sautéed onions
- 1 cup (250 mL) guacamole
Directions
- Preheat oven to 425°F (220°C). Lay two cheese slices over half of each tortilla.
- Top evenly with sweet potatoes, bacon and onions; fold over each tortilla to enclose toppings.
- Place quesadillas on parchment paper–lined baking sheet; bake, flipping halfway through cooking, for 15 to 18 minutes or until cheese is melted and tortillas are toasted. Let cool for 5 minutes.
- Cut each quesadilla in half and serve with guacamole for dipping.
Tips:
- For a quick alternative, swap puréed pumpkin for sweet potato.
- For a vegetarian option, swap canned, drained black beans for bacon.
- Alternatively, pan-fry the quesadillas in a large nonstick skillet set over medium heat for 3 to 5 minutes per side.
