Jerk Chicken Grilled Cheese
Prepared with rotisserie chicken and store-bought jerk marinade and jarred roasted red peppers, this spicy grilled chicken sandwich makes an easy lunch that’s bursting with flavour.

Ingredients
- 12 slices P’tit Quebec Brick Cheese Slices
- 3 tbsp (45 mL) mayonnaise
- 1 1/2 tbsp (22 mL) jerk marinade
- 2 tsp (10 mL) lime juice
- 1 cup (250 mL) shredded rotisserie chicken
- 2 green onions, finely chopped
- 8 slices sourdough bread
- 1/2 cup (125 mL) sliced roasted red peppers
- 1 mango, peeled and thinly sliced
- 2 tbsp (30 mL) butter, at room temperature
Instructions
- In small bowl, stir together mayonnaise, jerk marinade and lime juice; toss chicken with jerk mixture and green onions. Set aside.
- Layer each of 4 bread slices with 1 P’tit Quebec cheese slice, red pepper slices, mango slices, another cheese slice, jerk chicken mixture and another cheese slice. Cap with remaining bread. Spread butter over outer sides of bread.
- Heat large skillet over medium-low heat. In batches, cook sandwiches, pressing lightly, for 4 to 5 minutes per side or until bread is golden brown and cheese is melted.
- Cut grilled cheese in half to serve.
Tip: Serve sandwiches with a side of coleslaw if desired.
