Ingredients

  • 1 pkg (450 g) puff pastry (2 sheets)
  • 1 cup (250 mL) blueberry jam
  • 1 cup (250 mL) shredded P’tit Quebec Natural White Cheddar Medium Cheese
  • 1/2 cup (125 mL) toasted sliced almonds
  • 1 cup (250 mL) fresh blueberries
  • 1 egg
  • 2 tbsp (30 mL) honey

Directions

  1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper; set aside. Gently roll each puff pastry sheet into 12-inch square. Cut each sheet into four 6-inch (15 cm) squares.
  2. Spread 2 tbsp (30 mL) of blueberry jam evenly over each square. Sprinkle 2 tbsp (30 mL) cheese and 1 tbsp (15 mL) almonds over half of each pastry square. Divide blueberries evenly among squares.
  3. Fold edges over filling diagonally; use tines of fork to seal edges.
  4. Whisk egg with 1 tsp (5 mL) water and brush over hand pies. Cut small slits on top of each hand pie; transfer to prepared baking sheets. Bake for 15 to 20 minutes or until pastry is golden and flaky.
  5. Drizzle with honey before serving.

Tip: Also delicious with sliced strawberries and strawberry jam for strawberry hand pies.
