Ingredients

  • 1 pkg (320 g) P’tit Québec Lactose Free Mozza Cheese Shreds
  • 1/4 cup (60 mL) plant-based butter, divided
  • 2 large onions, thinly sliced
  • 1 1/2 tsp (7 mL) salt, divided
  • 1 tsp (5 mL) black pepper, divided
  • 1/4 tsp (1 mL) granulated sugar
  • 2 cloves garlic, minced
  • 2 tbsp (30 mL) all-purpose flour
  • 1 1/2 cups (375 mL) lactose-free cream
  • 1/2 cup (125 mL) lactose-free milk
  • 2 tbsp (30 mL) finely chopped fresh chives
  • 2 tbsp (30 mL) finely chopped fresh thyme
  • 1/2 tsp (2 mL) dry mustard powder
  • 1/2 tsp (2 mL) paprika
  • 1/4 tsp (1 mL) ground nutmeg
  • 3 lbs (1.5 kg) Yukon Gold potatoes, thinly sliced

Directions

  1. In large skillet set over medium heat, melt 1 tbsp (15 mL) butter. Add onions, 1/2 tsp (2 mL) salt, 1/4 tsp (1 mL) pepper and sugar. Cook, stirring often, for 10 to 12 minutes or until starting to soften. Reduce heat to low. Cook, stirring occasionally, for 15 to 20 minutes or until onions are golden brown and caramelized. Using slotted spoon, remove onions from skillet.
  2. In same skillet set over medium heat, melt remaining butter. Cook garlic, stirring, for 30 to 60 seconds or until softened. Sprinkle with flour. Cook for 1 to 2 minutes or until smooth. While whisking, slowly pour in cream and milk; bring to a boil. Reduce heat to low. Cook, stirring occasionally, for 3 to 5 minutes or until slightly thickened. Stir in in chives, thyme, mustard powder, paprika, nutmeg, remaining salt and remaining pepper.
  3. Preheat oven to 375°F (190°C). Grease 13- x 9-inch (33 x 23 cm) baking dish.
  4. Layer in half the potatoes, pour half the cream mixture over top, and sprinkle with half the onions and half the cheese. Repeat layers 1 more time. Cover with foil.
  5. Bake for 30 minutes. Remove foil and bake for 30 to 40 minutes or until golden brown and bubbling and potatoes are tender. Let stand for 10 to 15 minutes before serving.

Tips

    • If desired, substitute butter with olive oil or margarine.
    • For easy preparation, use store-bought caramelized onions.
    • Use a mandoline or food processor to thinly slice potatoes if desired.
