Ingredients

  • 8 P’tit Quebec Very Mild Cheddar Snacks, cut in half crosswise
  • 8 cloves garlic
  • 1/2 cup (125 mL) Greek yogurt
  • 1/4 cup (60 mL) lemon juice
  • 1/4 cup (60 mL) sunflower seed oil
  • 1/2 tsp (2 mL) salt
  • 8 cherry tomatoes
  • 8 slices cucumber (1/2-inch/1 cm thick slices)
  • 8 pitted black olives
  • 8 chunks romaine lettuce (about 1-inch/2.5 cm pieces)
  • 8 radishes
  • 2 tbsp (30 mL) finely chopped fresh mint
  • 1 tsp (5 mL) za’atar seasoning
  • 4 pita breads, warmed
  • 8 bamboo skewers

Instructions

  1. In food processor, pulse garlic until finely chopped; add yogurt, lemon juice, oil and salt. Purée until smooth and creamy. Refrigerate until ready to serve.
  2. Evenly thread cherry tomato, cucumber, olive, P’tit Quebec Cheddar snacks, romaine and radish onto each skewer. Arrange on serving platter; sprinkle with mint and za’atar.
  3. Serve skewers with warm pitas and garlic sauce.

Tip: Substitute tahini sauce for garlic sauce if preferred.
